- Add the shredded cheddar cheese.
- Stir until all the cheese is melted.
- Be careful not to turn the heat up too high to prevent curdling.
- Transfer one cup of soup to a blender.
- Blend the soup, allowing steam to escape through the vent.
- Transfer the blended soup back to the pot.
- Alternatively, use an immersion blender to gently blend the soup in the pot.
- Season with salt and pepper to taste.
