Method
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the finely chopped onion to the pot.
- Sauté the onion until it becomes translucent, about 5-7 minutes.
- Add the minced garlic, diced celery, and chopped carrots to the pot.
- Sauté these vegetables for another 5-7 minutes, allowing them to brown slightly.
- Pour in 1/3 cup of vegetable broth to deglaze the pot.
- Scrape up any browned bits from the bottom of the pot with a wooden spoon.
- Let the liquid simmer for about 5 minutes until most of it has evaporated.
- Stir in the drained and rinsed cannellini beans.
- Add the tomato paste to the pot.
- Stir in the salt, black pepper, red pepper flakes, Italian seasoning, bay leaves, dried thyme, and dried oregano.
- Pour in 2 1/2 cups of vegetable broth.
- Bring the mixture to a gentle boil.
- Cover the pot and reduce the heat to low.
- Allow the soup to simmer for 15 minutes.
- Discard the bay leaves from the soup.
- Carefully remove about 2 1/2 to 3 cups of the soup mixture and transfer to a blender.
- Blend the removed soup mixture until completely smooth.
- Return the blended mixture to the pot with the remaining soup.
- Stir to combine the blended and unblended soup.
- Add more vegetable broth, 1/2 cup at a time, if you prefer a thinner consistency.
- Stir in the chopped kale.
- Cook for a few minutes until the kale has wilted.
- Taste the soup and adjust with additional salt, pepper, or a squeeze of lemon juice if desired.
- Serve warm.

Always rinse canned beans thoroughly to remove excess sodium and starches.
