Easy Chicken Burrito Casserole

Ingredients
  

  • 1/2 cup finely diced onion
  • 1 red bell pepper diced
  • 1 cup uncooked parboiled long-grain brown rice
  • 3 tablespoons fajita seasoning
  • 1/8 teaspoon cayenne pepper (optional)
  • 1 cup corn kernels frozen
  • 1 14 ounce can low sodium black beans drained and rinsed
  • 5 cups shredded chicken
  • 3 cups reduced sodium chicken broth
  • 1 4 ounce can mild green chilies
  • 1 tablespoon olive oil
  • 2 tablespoons tomato paste
  • 1 1/4 cups shredded Monterey Jack cheese

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Add onion, bell pepper, uncooked rice, fajita seasoning, and cayenne (if using) to a 9x13 inch baking dish.
  3. Stir to combine the ingredients in the baking dish.
  4. In a separate bowl or measuring cup, whisk together the chicken broth, green chiles, tomato paste, and olive oil.
  5. Pour the broth mixture into the baking dish.
  6. Stir the broth mixture with the rice mixture until well combined.
  7. Add shredded chicken, black beans, and corn to the baking dish.
  8. Stir again until all ingredients are well combined.
  9. Cover the baking dish tightly with aluminum foil.
  10. Transfer the covered baking dish to the preheated oven.
  11. Bake for 65-70 minutes, or until all of the liquid is absorbed and the rice is cooked.
  12. Remove the baking dish from the oven.
  13. Carefully remove the aluminum foil.
  14. Sprinkle the shredded Monterey Jack cheese evenly over the casserole.
  15. Return the baking dish to the oven, uncovered, for a final 5-10 minutes.
  16. Bake until the cheese has melted and is slightly golden.
  17. Remove the casserole from the oven.
  18. Allow the casserole to cool for 5-10 minutes before serving.
  19. Serve with a sprinkle of fresh cilantro, green onion, salsa, and avocado, if desired.

Notes

Using pre-cooked shredded chicken (like rotisserie) saves a lot of prep time.
Ensure the baking dish is tightly covered with foil for even rice cooking.
Let the casserole rest for a few minutes after baking for easier serving.
Adjust cayenne pepper to your preferred spice level; omit for no heat.
