Method
- Preheat oven to 400 degrees F (200°C).
- Prepare a baking sheet by lining it with parchment paper or a Silpat.
- If making homemade almond paste: Add raw almonds to a food processor.
- Process until the almonds are completely fine.
- Add 1 1/2 cups powdered sugar, egg white, almond extract, and sea salt to the food processor.
- Combine for 1 to 2 minutes.
- Add coconut sugar (or regular sugar) and vanilla extract to the food processor.
- Process until the mixture turns into a paste and starts to gather.
- If the paste is runny, add 1/4 cup of extra powdered sugar at a time.
- Pulse in the food processor until the paste gathers together.
- For the puff pastry: Take half of the puff pastry sheet (save the other half for later).
- Roll the dough out to about 1/2-inch thick, or thinner if needed, so it fits your baking sheet.
- Transfer the rolled puff pastry to the prepared baking sheet.
- Cut triangles from the left side of the pastry.
- Cut 1-inch slits in the top and bottom of the puff pastry, as shown.
- Break the almond paste up with your fingers.
- Spread the almond paste throughout the center of the puff pastry.
- Start at the right side and fold the pastry towards the center.
- Braid the pieces by laying them over the center.
- Press the ends of the dough in to seal.
- Fold the left end in.
- Press down into the dough to seal up the ends.
- Prepare egg wash by scrambling one egg with a tablespoon or two of water.
- Paint the egg wash onto the top of the puff pastry dough.
- Sprinkle sliced almonds onto the top and sides of the pastry dough.
- Bake in the 400 degree F (200°C) oven for about 10 minutes.
- Lower the oven temperature to 375 degrees F (190°C).
- Continue baking for another 20-30 minutes.
- Check often once it turns a light golden brown.
- Look for the inside parts to firm up.
- Remove from the oven when golden brown and firm.
- Sprinkle with powdered sugar.
- Slice into serving sizes.
- Enjoy warm.
