Method
- Heat olive oil in a large (5-6 quart) pot over medium-high heat.
- Add onion to the pot.
- Sauté onion until softened, 3-5 minutes.
- Add garlic to the pot.
- Cook garlic for 30 seconds until fragrant.
- Pour chicken broth into the pot.
- Add diced green chilies (undrained) to the pot.
- Stir in ground cumin, cayenne pepper, dried oregano, and paprika.
- Squeeze in the juice from 1/2 small lime.
- Season with salt and freshly ground black pepper to taste.
- Drain great northern beans in a strainer.
- Rinse the drained beans thoroughly.
- Measure out a big ladleful of the rinsed beans.
- Place the measured beans into a food processor.
- Add a splash of broth from the soup pot to the food processor.
- Puree the beans until smooth.
- Add the pureed beans, the remaining whole beans, and corn to the soup pot.
- Bring the mixture to a simmer.
- Cook, uncovered, for 15 to 30 minutes, allowing flavors to meld.
- Remove the pot from heat.
- Stir in sour cream or plain Greek yogurt.
- Stir in the cooked, shredded chicken.
- Serve hot, garnished with desired toppings.
Notes
For extra creaminess, don't skip pureeing some of the beans.
Adjust cayenne pepper to your preferred level of spice.
