- Preheat your oven to 475°F.
- Line baking sheets with parchment paper to prevent sticking.
- In a small mixing bowl, whisk together the flour, cornstarch, salt, and baking soda.
- Cut the cold butter into smaller pieces.
- In a large mixing bowl, combine the cold butter pieces, granulated sugar, brown sugar, egg, and vanilla extract.
- Gently stir the whisked dry ingredients (flour, cornstarch, salt, and baking soda) into the large bowl with the butter, sugar, egg, and vanilla mixture.
- Add in the semi-sweet chocolate chips and optional walnuts.
- Mix gently until all ingredients are just combined.
- Using a full size spoon (tablespoon), scoop cookie dough balls onto the prepared baking sheets.
- Bake for 6 to 7 minutes, or until the tops of the cookies turn golden brown.
- Remove the cookies from the oven.
- Let the cookies cool on the baking sheets.
- For the softest cookies, eat them while they are still warm.
